The two just seem to belong together.\u00a0 The flavoring of the pork along with the bouquet of the wine compliment one another beautifully. Accompanied with a small salad, and the balance of the bottle of Petite left over from the recipe ( unless consumed while making the dish) it makes a perfect weeknight dish for just two or a great meal to serve to family and friends with your best china.<\/p>\n<p>Enjoy and <em><strong>\u201cDrink the Dream\u201d<\/strong><\/em><\/p>\n<p>Jan &amp; Len Gelfand<\/p>\n<p>&nbsp;<\/p>\n<h3><span style=\"color: #800000;\">Pork Tenderloin with Gelfand Vineyards Petite Sirah<\/span><\/h3>\n<p>(although some my refer to this dish as Gelfand Vineyards Petite Sirah\u00a0 with Pork Tenderloin)<\/p>\n<p>1\u00a0\u00a0 pork tenderloin<\/p>\n<p>1\u00a0\u00a0 tablespoon olive oil<\/p>\n<p>\u00be\u00a0\u00a0 teaspoon Kosher salt \u2013 divided<\/p>\n<p>\u00bd\u00a0\u00a0 teaspoon black pepper \u2013 divided<\/p>\n<p>1 \u00bd cups \u00a0\u00a0blackberries<\/p>\n<p>\u00bc\u00a0\u00a0 cup finely chopped shallots<\/p>\n<p>1\u00a0\u00a0 tablespoon chopped fresh thyme<\/p>\n<p>\u00bd &#8211; 1 cup \u00a0 <strong>Gelfand Vineyards Petite Sirah\u00a0<\/strong> ( it is permissible to double this amount and use half of it to enjoy while making the recipe)<\/p>\n<p>\u00be cup\u00a0\u00a0 chicken stock<\/p>\n<p>1.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Heat a large nonstick skillet over med-high heat.\u00a0\u00a0 Add oil to pan.\u00a0\u00a0 Swirl to coat.\u00a0 Sprinkle pork with \u00bd teaspoon of both the salt and pepper.\u00a0 Add pork to pan and cook for 8 minutes, turning on all sides till browned.\u00a0 Transfer to a lightly oiled baking sheet.<\/p>\n<p>2.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Bake 30 minutes or until a meat thermometer inserted into the thickest part of the meat registers 160 degrees.\u00a0\u00a0 Transfer meat to a cutting board: let rest.<\/p>\n<p>3.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add blackberries, shallots and thyme to skillet and saut\u00e9 2 minutes or until slightly softened.\u00a0 Add wine, and cook one minute or until syrupy.\u00a0 \u00a0Add chicken stock and any juices from the pork.<\/p>\n<p>4.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cook 5 minutes or until thickened and reduced to about \u00bd &#8211; \u00be cup.\u00a0 Stir in remaining salt and pepper<\/p>\n<p>5.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cut pork into \u00bc &#8211; \u00bd inch slices and serve with the sauce and an additional glass \u2013 or two \u2013 of Gelfand\u2019s Petite Sirah.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Gelfand Vineyards shares their wine country recipe and wine pairing.
